Great food is all about the presentation. If you have friends over and serve pancakes – that’s nice! But if you surprise them with a stacked pancake layer cake they will be impressed!
The extra effort is so small – but the result looks amazing. You don’t even have to be very talented to manage – because the uneven, childish look is what makes it special.
You can use your usual pancake recipe, google for a new one, or use this grain free version that we love:
You need a bowl and a hand held mixer.
- 2 bananas
- a good handful spinach leaves
- the zest (grated peel) of one organic orange
- the zest (grated peel) of one organic lemon
- 8 eggs
Now use the hand held mixer and mix the above. Then add:
- 2 tbsp. coconut flour
- optionally, 1 teaspoon baking powder
Mix / stir again and heat up a small frying pan.
Fry the pancakes one by one in coconut oil or butter. Don’t worry about perfect shape – uneven pancakes looks adorable when stacked.
Place the pancakes on a nice plate as you make them and spread a little jam between each. I prefer to only spread the jam in the middle, that way the sides hangs down a bit and gives a nicer shape.
You can easily make the jam yourself by mixing:
- 400 ml berries (fresh or thawed frozen)
- the juice of an orange
- 3 tbsp. chia seeds
Leave this to swell while you prepare the pancakes – stirring the jam every now and then. It takes about 10 minutes and is well worth the effort!
Keep layering, and let the last layer be a smaller pancake.
I like to top this off with a yogurt sauce:
- 100 ml natural yogurt
- ½ tbsp. honey or maple syrup
- ½ tbsp. juice from an orange
Pour sauce over the pancake stack and sprinkle a few berries, some roasted nuts, orange zest – or whatever you have at hand that looks nice.
